Throughout the process of cold extraction of olives and their harvest the temperature does not exceed 20 degrees Celsius. The timing of the harvest and the pressing temperature is the most crucial due to the impact on the quality of olive oil.
We gather only the best young olives that produce a very low acidity oil and process within 24 hours. That way we achieve a high quality extra virgin olive oil, characterized of its perfect flavor and fruity aroma.
