KALAMON OLIVE PASTE WITH BLACK GARLIC & BASIL 180g
BRUSCHETTA WITH BLACK GARLIC AND BASIL OLIVE PASTE

Ingredients: 2 tbsp olive oil, 1 crushed garlic clove, 6 thick slices ciabatta, 1 tbsp fresh lemon juice, 1 ripe avocado sliced into strips, 2 ripe tomatoes sliced into strips, 1 small bunch fresh basil leaves, 200g mozzarella, salt and black pepper.
Instructions:
Heat a frying pan until hot.
Mix the olive oil and garlic together in a bowl. Brush the ciabatta slices with the garlic oil and then pan-fry the bread for 2 minutes on each side until brown and crispy.
Remove from the heat and spread the olive paste over the toasts.
Drizzle the lemon juice over the avocado, then arrange on the toasts, followed by the tomato strips, basil and mozzarella pieces. Season well with salt and black pepper.
Drizzle with extra oil before serving, and garnish with whole basil leaves.
